Our freezer beef is butchered at a small USDA licensed slaughterhouse. The meat is cut and vacuum sealed the same way that our retail beef is sold. Quarters are not customizable, halves and wholes are customizable. Our sales manager, Arleigh Johnson, has over ten years butcher experience and teaches at the SUNY Cobleskill meat lab. He is knowledgeable in the cuts and how to cook them.
